Crispy Baked Chicken Tacos





Serves 8 |
Crunchy, cheesy and absolutely delicious.
Ingredients:
2 1/2 tablespoons canola oil |
1 lb ground chicken |
3 cloves garlic, minced |
1/2 sweet onion, diced |
1 can chopped green chiles, 4.5 oz. |
1 1/2 teaspoons chili powder |
1/2 teaspoon dried oregano |
1/2 teaspoon ground cumin |
1/2 teaspoon smoked paprika |
1 tablespoon lime juice |
1/4 cup chopped fresh cilantro leaves |
Kosher salt, to taste |
Ground black pepper, to taste |
1 1/2 cups shredded Mexican cheese blend |
8 tortillas, flour or corn |
Directions:
- Preheat oven to 425° F. Grease a baking sheet with nonstick spray.
- Pour 1 tablespoon of canola oil into a large skillet, bring to medium-high heat. Place the ground chicken, garlic, and onion into the skillet. Cook and break apart for 3-5 minutes, until evenly browned. Drain excess fat.
- Add the green chiles, chili powder, oregano, cumin, and paprika to the chicken in the skillet. Stir and cook for 2 minutes.
- Remove the skillet from the heat. Stir in the lime juice, cilantro, salt and pepper. Then add 1 cup of the shredded cheese, stir until combined.
- Spoon the chicken mixture onto one side of each tortilla. Sprinkle the remaining shredded cheese over the chicken. Fold over the tortilla.
- Arrange the tacos on the baking sheet. Brush the remaining canola oil over the tops.
- Place in the baking sheet in oven and bake for 12-15 minutes, until crispy.
- Remove the tacos from the oven. Garnish the tacos with your favorite toppings and enjoy!
