Creamy Chicken Fajita Pasta

Serves 4 |
All the flavors minus the tortilla.
Ingredients:
12 oz pasta, your preference |
3 tablespoons olive oil |
1 lb chicken breast, diced |
1 oz fajita seasoning |
1 green pepper, chopped |
1 red pepper, chopped |
1 yellow onion, chopped |
3/4 cup double cream |
1/2 cup grated cheddar |
Ground black pepper, to taste |
Directions:
- Cook the pasta in salted water according to the package directions.
- Pour the olive oil into a large pan. Bring to medium heat and cook the chicken for 4-5 minutes, until slightly golden.
- Sprinkle the fajita seasoning over the chicken. Cover the pan and let cook for 1 minute. Then add the green and red peppers, along with the yellow onion. Cook and stir for 4-5 minutes until the vegetables have softened. Pour in the double cream and let cook for another minute.
- Pour the pasta into the pan and stir together. Add the grated cheddar and stir until the cheese melts.
- Transfer to serving plates. Season with black pepper. Enjoy!
