Slow Cooker Short Rib Tacos

The pinnacle of delicious homemade tacos.

Ingredients:

4 lb beef short ribs
2 teaspoon kosher salt
1 teaspoon black pepper
4 tablespoons flour
3 tablespoons vegetable oil
3 tablespoons brown sugar
1 tablespoon smoked paprika
1 tablespoon ground cumin
6 cloves garlic, minced
1 onion, sliced
3 chipotle peppers
2 tablespoons adobo sauce
2 cups beef stock
1 bottle dark beer, 12 oz.
6 tortillas
1/2 cup crumbled Queso Fresco cheese

Directions:

  1. Season the short ribs with salt and black pepper. Sprinkle the flour over the ribs, coating evenly.
  2. Bring a medium pan to medium-high heat. Add the vegetable oil. Once hot, place the short ribs in the pan and brown on all sides. Transfer the short ribs to the slow cooker.
  3. Add the brown sugar, smoked paprika, cumin, garlic, onion, chipotle peppers, adobo sauce, beef stock and dark beer to the slow cooker. Place the lid on and cook, high for 6 hours or low 10 hours.
  4. Pull the meat the bones and return the meat to the juices.
  5. Warm the tortillas and place an equal amount of meat in each one. Top with Queso Fresco and enjoy!
