Slow Cooker Short Rib Tacos





Serves 6 |
The pinnacle of delicious homemade tacos.
Ingredients:
| 4 lb beef short ribs |
| 2 teaspoon kosher salt |
| 1 teaspoon black pepper |
| 4 tablespoons flour |
| 3 tablespoons vegetable oil |
| 3 tablespoons brown sugar |
| 1 tablespoon smoked paprika |
| 1 tablespoon ground cumin |
| 6 cloves garlic, minced |
| 1 onion, sliced |
| 3 chipotle peppers |
| 2 tablespoons adobo sauce |
| 2 cups beef stock |
| 1 bottle dark beer, 12 oz. |
| 6 tortillas |
| 1/2 cup crumbled Queso Fresco cheese |
Directions:
- Season the short ribs with salt and black pepper. Sprinkle the flour over the ribs, coating evenly.
- Bring a medium pan to medium-high heat. Add the vegetable oil. Once hot, place the short ribs in the pan and brown on all sides. Transfer the short ribs to the slow cooker.
- Add the brown sugar, smoked paprika, cumin, garlic, onion, chipotle peppers, adobo sauce, beef stock and dark beer to the slow cooker. Place the lid on and cook, high for 6 hours or low 10 hours.
- Pull the meat the bones and return the meat to the juices.
- Warm the tortillas and place an equal amount of meat in each one. Top with Queso Fresco and enjoy!
