Curry Chicken Kebabs

Full of flavor with a hint of heat.

Ingredients:

For the Chicken:
4 chicken breasts, diced into cubes
2 tablespoons curry powder
1 teaspoon chili powder
1 teaspoon paprika
2 tablespoons lime juice
2 tablespoons avocado oil
1/2 teaspoon sea salt
For the Curry Mayonnaise Dip:
1/2 cup mayo
2 tablespoons curry powder
1 teaspoon lime juice

Directions:

  1. Stir together the curry powder, chili powder, paprika, lime juice, avocado oil, and sea salt in a large mixing bowl. Add the chicken and toss to coat. Cover the bowl and place the bowl into the refrigerator. Let the chicken marinate for at least 1 hour.
  2. Preheat oven to 450° F. Line a baking sheet with parchment paper.
  3. If you're using wooden skewers, let soak for 30 minutes before using.
  4. Skewer the chicken, about 6 pieces each. Place the kabobs on the baking sheet.
  5. Place in the oven and bake for 25 minutes, flipping at the 15 minutes.
  6. Stir together the mayonnaise, curry powder and lime juice in a small mixing bowl.
  7. Serve the kabobs with the curry mayo dip. Enjoy!
