Curry Chicken Kebabs





Serves 6 |
Full of flavor with a hint of heat.
Ingredients:
For the Chicken: |
4 chicken breasts, diced into cubes |
2 tablespoons curry powder |
1 teaspoon chili powder |
1 teaspoon paprika |
2 tablespoons lime juice |
2 tablespoons avocado oil |
1/2 teaspoon sea salt |
For the Curry Mayonnaise Dip: |
1/2 cup mayo |
2 tablespoons curry powder |
1 teaspoon lime juice |
Directions:
- Stir together the curry powder, chili powder, paprika, lime juice, avocado oil, and sea salt in a large mixing bowl. Add the chicken and toss to coat. Cover the bowl and place the bowl into the refrigerator. Let the chicken marinate for at least 1 hour.
- Preheat oven to 450° F. Line a baking sheet with parchment paper.
- If you're using wooden skewers, let soak for 30 minutes before using.
- Skewer the chicken, about 6 pieces each. Place the kabobs on the baking sheet.
- Place in the oven and bake for 25 minutes, flipping at the 15 minutes.
- Stir together the mayonnaise, curry powder and lime juice in a small mixing bowl.
- Serve the kabobs with the curry mayo dip. Enjoy!
