Marinated Chimichurri Chicken Salad

Serves 4 | 
A wholesome meal with incredible flavor.

Ingredients:

Bottled chimichurri sauce
4 boneless skinless chicken breasts
1 teaspoon olive oil
5 cups Romaine lettuce, washed and dried
3 tomatoes, sliced
2 avocados, sliced
1/2 red onion, sliced

Directions:

  1. Place the chicken breasts in a shallow rimmed dish. Pour enough chimichurri sauce over top to cover the chicken. Flip and coat evenly. Allow the chicken to marinate for 30 minutes.
  2. Pour the olive oil into a skillet and bring to medium-high heat. Once hot, place the chicken into the skillet. Cook until light golden brown then flip and cook to golden brown.
  3. Remove the chicken from the skillet and slice into strips.
  4. Pour the lettuce into a salad bowl. Place the tomatoes, avocado and red onion on top of the lettuce. Place the chicken on top of the veggies. Drizzle chimichurri sauce over top and toss together.
  5. Transfer the salad into serving bowls. Enjoy!
