Chocolate Dipped Crispy Rice Peanut Butter Balls

Serves 25 balls | 
Chocolatey, peanut buttery perfection.

Ingredients:

2 cups creamy peanut butter
2 teaspoons vanilla extract
1/2 cup salted butter
2 cups powdered sugar
3 1/2 cups crispy rice cereal
1 package chocolate wafers, 20 oz.

Directions:

  1. Add the peanut butter, vanilla extract, and butter to a mixing bowl. Stir together until fully combined.
  2. Add the powdered sugar to the peanut butter mixture. Stir together well.
  3. Fold the crispy rice cereal into the peanut butter mixture.
  4. Use a scoop to portion out the balls. Roll the balls in your hands to smooth them out and arrange them on a cookie sheet. Set aside.
  5. Melt the chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between session, until fully melted.
  6. Individually dip the balls in the melted chocolate. Place them back on the cookie sheet.
  7. Place the cookie sheet in the refrigerator for 15 minutes until the chocolate shell on the peanut butter balls has hardened.
  8. Remove from the refrigerator and enjoy!
