Black Bean Fajita Pasta

Veggie rich and utterly delicious.

Ingredients:

1 can black beans, drained and rinsed, 15 oz.
1 can diced tomatoes, 15 oz.
2 bell peppers, chopped
1 cup canned corn kernels
1/4 cup sliced red onion
1 teaspoon salt
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon cumin
1 cup vegetable stock
2 cups fusilli pasta
1 tablespoon lime juice
1 cup shredded mozzarella cheese

Directions:

  1. Combine the black beans, diced tomatoes, bell pepper, corn, red onion, salt, paprika, chili powder, and cumin in a mixing bowl. Stir together until thoroughly combined.
  2. Pour the vegetable stock into a medium pot. Add the fusilli pasta and black bean mixture to the pot. Stir together. Cover and bring to a boil on high heat. Once boiling, reduce heat to low and let simmer for 15 minutes, stirring occasionally. Then pour the lime juice into the pot and sprinkle the mozzarella cheese over top. Let sit until until the cheese has melted.
  3. Spoon into serving bowls and enjoy!
