Ground Turkey, Zucchini and Chickpea Skillet

Easy, wholesome and delicious!

Ingredients:

2 tablespoons avocado oil
1 lb ground turkey
3 cloves garlic, minced
1 cup chopped white onion
1/4 cup tomato paste
1 cup canned diced tomatoes with juices
3/4 cup canned peas, drained
1 1/2 cups chopped zucchini
1 cup chickpeas, drained and rinsed
1/2 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup shredded mozzarella cheese

Directions:

  1. Drizzle 1 tablespoon of avocado oil into a large skillet and bring to medium heat. Add the ground turkey and cook until thoroughly browned.
  2. Push the ground turkey to one side of the skillet. Pour in the remaining avocado oil. Add the garlic and onion. Cook and stir for 2 minutes.
  3. Add the tomato paste, canned tomatoes, peas, zucchini, chickpeas, chili powder, garlic powder, onion powder, paprika, salt and pepper to the skillet. Stir everything together. Reduce heat to low and cook for 4 minutes, stirring often.
  4. Remove the skillet from the heat. Sprinkle the shredded mozzarella over top. Cover and let sit for 2 minutes.
  5. Spoon onto serving plates and enjoy!
