Peppermint Sugar Cookie Bars

Two wintertime favorites in one treat.
Ingredients:
1/2 cup unsalted butter, softened |
3/4 cup sugar |
1 egg |
1 teaspoon vanilla extract |
1 3/4 cups flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/4 cup crushed peppermint candy |
For the Frosting: |
1/2 cup unsalted butter, softened |
2 cups powdered sugar |
2 tablespoons heavy cream |
1/2 teaspoon peppermint extract |
1/4 teaspoon salt |
Directions:
- Preheat oven to 350° F. Line a 9x9 baking pan with parchment paper. Grease with baking spray.
- Beat together the butter and sugar in a mixing bowl until fluffy. Mix in egg and vanilla extract. Then add the flour, baking powder, salt, and crushed peppermint candy. Mix until combined.
- Pour the batter into the baking pan.
- Place into the oven. Bake for 20 minutes, until golden brown. Remove from oven and let cool.
- Lift the parchment paper to pull the whole cookie bar out of the baking pan. Set aside.
- Mix the butter, powdered sugar, heavy cream, peppermint extract, and salt in a small bowl to make the frosting.
- Spread the frosting across the top of the cookie bars. Let frosting get firm then cut into squares and enjoy!
