Peppermint Sugar Cookie Bars

Two wintertime favorites in one treat.

Ingredients:

1/2 cup unsalted butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup crushed peppermint candy
For the Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons heavy cream
1/2 teaspoon peppermint extract
1/4 teaspoon salt

Directions:

  1. Preheat oven to 350° F. Line a 9x9 baking pan with parchment paper. Grease with baking spray.
  2. Beat together the butter and sugar in a mixing bowl until fluffy. Mix in egg and vanilla extract. Then add the flour, baking powder, salt, and crushed peppermint candy. Mix until combined.
  3. Pour the batter into the baking pan.
  4. Place into the oven. Bake for 20 minutes, until golden brown. Remove from oven and let cool.
  5. Lift the parchment paper to pull the whole cookie bar out of the baking pan. Set aside.
  6. Mix the butter, powdered sugar, heavy cream, peppermint extract, and salt in a small bowl to make the frosting.
  7. Spread the frosting across the top of the cookie bars. Let frosting get firm then cut into squares and enjoy!
