Sweet and Spicy Honey Sriracha Salmon Bowls

Serves 4 |
Quick and easy to make with big flavors.
Ingredients:
4 salmon fillets, 4-6 oz. each |
3 tablespoons water |
2 tablespoons honey |
2 tablespoons Sriracha sauce |
2 teaspoons minced garlic |
3 tablespoons Tamari sauce |
1 tablespoon olive oil |
2 cups white rice, cooked |
1 cup edamame, cooked |
1 cucumber, sliced |
1 avocado, sliced |
1/2 cup Sriracha mayo |
Directions:
- Cut salmon fillets into 1-inch cubes. Set aside.
- Combine the water, honey, Sriracha sauce, minced garlic and tamari sauce in a large mixing bowl. Whisk together until well combined.
- Place the salmon into the mixing bowl. Cover and place the bowl into the refrigerator. Allow the salmon to marinate for 1 hour.
- Pour olive oil into a large pan and swirl around to coat. Bring to medium heat.
- Remove the salmon from the marinade. Place salmon into the pan and cook for 2-3 minutes on each side, until lightly crisp. Remove from heat.
- Place an even amount of cooked rice into each serving bowl. Add crispy salmon and top with edamame, cucumber slices and avocado slices. Swirl Sriracha mayo over top and enjoy!
