Delectable Tortellini Primavera

Rich with flavors and wholesome ingredients.

Ingredients:

1 package refrigerated cheese tortellini, 9 oz.
1 tablespoons extra-virgin olive oil
2 cloves garlic, pressed
2 zucchini, chopped
2 yellow squash, chopped
Sea salt, to taste
Ground black pepper, to taste
1 bunch green onions, chopped
1 pint grape tomatoes, halved
1/2 cup creamy Caesar salad dressing
1/2 cup shredded Parmesan cheese

Directions:

  1. Cook tortellini according to package directions. Drain water and set aside.
  2. In a large skillet, pour in olive oil, bring to medium heat and saute garlic, zucchini and yellow squash for 5 minutes. Season with sea salt and pepper.
  3. Transfer tortellini to a mixing bowl. Pour the squash mixture into the bowl. Add green onions and grape tomato halves. Season with sea salt and pepper. Toss together until well combined.
  4. Drizzle the Caesar salad dressing over top and toss to coat.
  5. Transfer tortellini primavera to serving plates. Sprinkle with parmesan cheese and enjoy!
