Apple Streusel Loaf Cake





Serves 8 |
Light and fluffy in the middle with a little crunch on top.
Ingredients:
For Streusel Topping: |
2 teaspoon ground cinnamon |
1/2 cup packed light brown sugar |
1 cup flour |
1 stick butter, melted |
For Cake: |
2 eggs |
1/2 cup milk |
1/2 cup butter, melted |
1 box butter cake mix, 15.25 oz. |
2 red apples, peeled, cored and diced, Cortland, Empire or Jonathan work well |
Directions:
- Heat oven to 350° F. Grease a large loaf pan with baking spray.
- Make streusel topping by combining ground cinnamon, brown sugar, flour and butter in a mixing bowl. Stir with a fork until crumbly. Set aside.
- Beat eggs in a medium bowl with a fork until liquified. Stir in milk and butter. Add the cake mix and fold until dry ingredients are well combined.
- Spoon half of the batter into the loaf pan. Layer half of the apples over the batter. Sprinkle half of the streusel over the apples. Spoon in the remaining batter, then layer on the remaining apples and sprinkle on the remaining streusel topping.
- Place the loaf pan into the oven and bake for 70-80 minutes.
- Remove loaf pan from the oven and let cool in the pan for 10 minutes. Remove the cake from the loaf pan and place on a wire rack to cool completely before serving.
