Banana Breakfast Bars





Serves 10 |
A cross between a banana blondie and a granola bar.
Ingredients:
| 2 ripe bananas |
| 1/4 cup brown sugar |
| 1/4 cup coconut oil |
| 1/2 teaspoon salt |
| 1 egg |
| 1 teaspoon vanilla extract |
| 1/2 teaspoon baking soda |
| 1 cup old fashioned oats |
| 1/2 cup wheat flour |
Directions:
- Preheat oven to 350° F. Grease a large square baking pan with cooking spray.
- Place bananas into a mixing bowl and mash with a fork.
- Add brown sugar and coconut oil to the mashed bananas and mix together well.
- Add the salt, egg and vanilla extract to the mash and mix together well.
- Add the baking soda to the mash and mix well.
- Add the oats and wheat flour to the mash and mix well.
- Transfer the mash to the baking pan. Use a spoon to spread out and make smooth.
- Place the baking pan in the oven and bake for 18-22 minutes, until edges are golden brown.
- Remove from the oven, let cool completely and cut into 10 bars.
