Lemon Parmesan Lettuce Salad





Serves 6 |
Light, flavorful and easy to prepare.
Ingredients:
1 bundle red leaf lettuce |
2 romaine lettuce hearts |
2 lemons, juiced and zested |
2 shallots, sliced thin |
Kosher salt, to taste |
Ground black pepper, to taste |
1/4 cup extra virgin olive oil |
1 cup finely grated parmesan cheese |
Directions:
- Chop up romaine hearts and red leaf lettuce. Place the lettuce in a large salad bowl, rinse with water and drain. Pat lettuce dry.
- Return lettuce to the bowl. Add lemon zest and shallots. Season with salt, pepper, olive oil and lemon juice. Toss together until well combined.
- Sprinkle parmesan cheese over top and toss together.
- Use the salad tongs to transfer salad to serving plates and enjoy!
