Simple Country Salad

Serves 8 |
A uniquely flavorful salad.
Ingredients:
1 tablespoon fresh lemon juice |
1/2 teaspoon salt |
1 teaspoon honey |
1/3 cup extra-virgin olive oil |
1/2 lb escarole, chopped |
1/4 lb mustard greens, trimmed and finely chopped |
1/2 lb dandelion greens, discard stems and cut leaves crosswise |
2 oz baby spinach |
1/2 cup chopped fresh dill |
1/4 cup fresh flat-leaf parsley |
1/4 cup thinly sliced scallion |
Directions:
- Whisk together lemon juice, salt, and honey in a mixing bowl and add oil in a slow stream, whisking until blended. Set Aside.
- Combine escarole, mustard greens, dandelion greens, baby spinach, dill, parsley and scallions in a salad bowl. Drizzle dressing over salad, toss to coat, and enjoy!
