The Best Chicken Fried Chicken

Absolutely easy and delicious.

Ingredients:

2 eggs
Vegetable oil, for frying
1/2 teaspoon kosher salt, more for seasoning
1/4 teaspoon cayenne
4 chicken breasts, boneless, skinless
1 teaspoon ground black pepper, more for seasoning
1 cup buttermilk
1 1/2 cups flour

Directions:

  1. Pour oil into a large skillet, turn to medium-high heat.
  2. Tenderize chicken and pound to 1/4-inch thick.
  3. Combine ground black pepper, flour, cayenne and salt in a mixing bowl.
  4. Whisk together buttermilk and eggs in a separate bowl, whisk until well blended.
  5. Lightly sprinkle chicken breasts with pepper and salt, then dredge in flour mix.
  6. Dip floured chicken breasts in buttermilk mix then dredge in flour mix.
  7. Place chicken breasts in the skillet one at a time. Cook for 2 minutes per side. Flip only once. Repeat until all chicken breasts are cooked.
  8. Lay chicken on paper towels and drain.
