Vegetable Lasagna with Spicy Sausage

A hearty and wholesome dinner favorite.

Ingredients:

1 box lasagna noodles, 16 oz.
1 lbs spicy breakfast sausage
2 sweet onions, chopped
6 cloves garlic, minced
1 cup diced carrots
1 jar pasta sauce, 28 oz.
1 container Ricotta cheese, 15 oz.
1 bag fresh spinach, 10 oz.
3 cups shredded mozzarella cheese
2 tablespoon Italian seasoning
1 tablespoon Extra Virgin Olive Oil

Directions:

  1. Cook lasagna noodles according to package directions.
  2. Saute sausage, onions, garlic and carrots together in a pan over medium heat. Cook until meat is no longer pink, and vegetables are tender. Drain liquids and set aside.
  3. Preheat oven to 350° F.
  4. Grease a large baking pan with non-stick cooking spray. Make 3 layers in this order: pasta sauce, lasagna noodles, ricotta cheese, sausage-veggie mixture, spinach, and shredded mozzarella.
  5. Sprinkle Italian seasoning over top and cover with aluminum foil. Place in the oven to bake for 45 minutes.
