Chocolaty, Chocolaty Cupcakes

Ingredients:

1 cup flour
1 teaspoon baking soda
1/3 cup unsweetened cocoa
1/8 teaspoon salt
4 tablespoons butter, softened
2/3 cup granulated sugar
1 teaspoon vanilla
1/2 cup egg substitute
1/2 cup buttermilk
1 oz. dark chocolate, finely chopped
Powdered sugar, for sprinkling

Directions:

  1. Preheat oven to 350° F.
  2. Loosely spoon flour into a dry measuring cup then level off with a knife. Combine flour, baking soda, cocoa, and salt; whisk to combine then set aside.
  3. Place butter and sugar in a large bowl; with a mixer, beat ingredients at medium speed for about 3 minutes, until combined. Add vanilla and egg substitute to bowl then beat until combined. Alternately add flour mixture and buttermilk to granulated sugar mixture. Fold in chocolate.
  4. Spoon batter into 12 lined muffin cups. Bake for about 18 minutes, or until a wooden toothpick inserted in the middle of a cupcake comes out clean. Remove cupcakes from pan then cool completely on a wire rack. Sprinkle cupcakes with powdered sugar right before serving.
