Herb and Garlic Sweet Potato Fries

A wholesome and savory alternative.

Ingredients:

2 lb sweet potatoes, peeled, cut into wedges
2 tablespoons olive oil
Salt, to taste
Ground black pepper, to taste
1 teaspoon chopped fresh thyme
2 tablespoons chopped fresh Italian parsley
2 cloves garlic, finely minced

Directions:

  1. Preheat oven to 500° F.
  2. Coat a baking sheet with vegetable oil spray.
  3. In a large bowl, toss together sweet potatoes and olive oil. Place potatoes on prepared baking sheet, in one layer, then season generously with salt and black pepper.
  4. Bake for about 30 minutes, until golden brown, turning once during cooking.
  5. In a small bowl, mix together thyme, parsley and garlic. Sprinkle over sweet potato fries.
