Chicken Parmesan Meatloaf





Serves 6 |
Filled with real, wholesome ingredients.
Ingredients:
| 2 lb ground chicken |
| 1 cup marinara sauce |
| 6 cloves garlic, minced |
| 4 tablespoons fresh chopped parsley |
| 2 Italian seasoning |
| 2 teaspoons onion powder |
| 2 1/2 teaspoons salt |
| 1 teaspoon ground black pepper |
| 1/2 cup Ricotta cheese |
| 1 cup shredded Mozzarella cheese |
| 1 cup shredded Parmesan cheese |
Directions:
- Preheat the oven to 400° F. Line a loaf pan with parchment paper.
- In a large mixing bowl, combine the ground chicken, 1/2 cup marinara sauce, 5 cloves of garlic, 2 tablespoons parsley, Italian seasoning, onion powder, 2 teaspoons salt, and pepper. Mix well to combine. Divide into 2 equal portions.
- In a separate mixing bowl, combine the ricotta, 1/2 cup mozzarella, 1/2 cup parmesan, 2 tablespoons parsley, 1 garlic clove, and 1/2 teaspoon salt. Mix until well combined.
- Add 1/2 of the meat mixture to the loaf pan and press down to evenly to coat the bottom. Add the cheese mixture to the center of the pan. Add the other 1/2 of the meat mixture and press down to fully seal the cheese in the middle.
- Bake for 20 minutes. Remove from the oven and add 1/2 cup marinara sauce to the top. Spread around to evenly coat the top. Sprinkle the other 1/2 cup mozzarella and 1/2 cup parmesan over the top.
- Bake for an additional 20 minutes.
- Remove meatloaf from the oven. Slice into 6 portions and enjoy!
