Rice Pilaf with Thyme and Tomatoes





Serves 4 |
Ingredients:
| 1 tablespoon olive oil |
| 1 cup long-grain white rice |
| 1/2 cup finely chopped onion |
| 1/4 teaspoon dried thyme |
| 1 can diced tomatoes, in juice, 15 oz. |
| 1 cup water |
| Sea salt, to taste |
| Ground black pepper, to taste |
Directions:
- Heat olive oil in a small saucepan over medium heat.
- Add rice and onion to the saucepan. Cook for 8 minutes, stirring frequently until rice is golden.
- Add thyme, tomatoes and water, stir together. Season ingredients with salt and black pepper. Increase heat to bring to a boil. Once boiling, reduce heat to medium-low and cover. Simmer for 16-18 minutes, until rice is tender.
- Remove saucepan from heat, and allow to sit, covered, for 10 minutes before serving.
