Rice Pilaf with Thyme and Tomatoes

Serves 4 | 

Ingredients:

1 tablespoon olive oil
1 cup long-grain white rice
1/2 cup finely chopped onion
1/4 teaspoon dried thyme
1 can diced tomatoes, in juice, 15 oz.
1 cup water
Sea salt, to taste
Ground black pepper, to taste

Directions:

  1. Heat olive oil in a small saucepan over medium heat.
  2. Add rice and onion to the saucepan. Cook for 8 minutes, stirring frequently until rice is golden.
  3. Add thyme, tomatoes and water, stir together. Season ingredients with salt and black pepper. Increase heat to bring to a boil. Once boiling, reduce heat to medium-low and cover. Simmer for 16-18 minutes, until rice is tender.
  4. Remove saucepan from heat, and allow to sit, covered, for 10 minutes before serving.
