Grapefruit-Cilantro Salad

Ingredients:

4 tablespoons fresh pink grapefruit juice
2 tablespoons olive oil
3 teaspoons red wine vinegar
1 teaspoon honey
3 teaspoons fresh cilantro, minced
4 cups torn Bibb lettuce
2 medium grapefruits, red or pink variety, peeled and sectioned

Directions:

  1. Whisk grapefruit juice, olive oil, red wine vinegar and honey in a bowl, then stir in cilantro. 
  2. In a salad bowl, toss together the lettuce and grapefruit segments.
  3. Drizzle salad with dressing and toss gently to coat. Serve immediately.
