Spiced Pot Roast

Succulet, rich and superbly tender.

Ingredients:

3 lb boneless beef rump roast
1/3 cup flour
2 tablespoons vegetable oil
1 1/2 cups beef broth
1/2 cup raisins
1/2 cup chutney
1/2 cup chopped onion
1 1/2 teaspoons curry powder
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper

Directions:

  1. Preheat oven to 325° F.
  2. In a bowl, combine flour, salt and pepper; rub over entire roast.
  3. Pour vegetable oil into a Dutch oven, bring to medium heat. Brown roast on all sides.
  4. In a separate bowl, combine broth, raisins, chutney, onion and spices. Pour mixture over roast.
  5. Cover and bake in oven for 3 hours.
