Low and Slow Pork Spare Ribs

These ribs are extra flavorful and tender.

Ingredients:

4 racks pork spare ribs, cleaned
1 teaspoon cayenne pepper
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
BBQ sauce, as needed

Directions:

  1. Heat grill to medium-low heat.
  2. Combine the cayenne pepper, salt and black pepper in a small bowl; liberally sprinkle the ribs with the seasoning mixture.
  3. Set ribs, bone-side down, in the center of the cooking grate. Grill ribs, covered, for 2 to 3 hours or until meat has pulled back from the ends of the rib bones. (For the first 30 minutes of cooking time do not remove cover from grill. If the edges of ribs start to burn, stack them one on top of the other in the very center of the grill then lower the heat slightly.)
  4. Twenty minutes before serving brush ribs with barbecue sauce.
  5. Remove ribs from grill and let them rest for 5 to 10 minutes before serving.
