Pork Chops With Citrus Salsa

Serves 6 | 
A bright and flavorful pork chop dish.

Ingredients:

6 pork chops
1 orange
1 grapefruit
1 cup diced fresh pineapple
1 fresh jalapeno pepper
1/4 red onion
1 tablespoon fresh coriander
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste

Directions:

  1. Peel and dice the orange and the grapefruit, and then de-seed and finely chop the jalapeno pepper. Slice onion into thin strips and roughly cut the coriander. Mix everything in a large bowl and add a little salt, then cover and leave in the fridge for three to four hours for the flavors to develop.
  2. Preheat oven to 390° F. Brown the pork chops in a dash of olive oil, and then season them with salt and pepper and transfer them to an oven proof dish. Cover the dish and cook for 30-40 minutes until the chops are cooked through and tender. Remove from oven and cool for 5-10 minutes, then top with fresh salsa and serve.
