Pecan Pie Bars

Everything you love about pecan pie, in a small, handheld size!

Ingredients:

For Crust:
2 2/3 cups flour
2 sticks unsalted butter
1/2 teaspoon salt
2/3 cup brown sugar
For Pie Filling:
2 tablespoons heavy cream
2 cups chopped pecans
1/3 cup honey
1 stick unsalted butter
1 cup light brown sugar

Directions:

  1. Preheat oven to 350° F. Line a medium baking pan with aluminum foil. (With 2-inch overhang)
  2. Cream together 2/3 brown sugar and 2 sticks butter in a mixing bowl. Add salt and flour. Mix together until crumbly.
  3. Place crust mixture on baking sheet. Place in oven and bake for 20 minutes. (Should be golden brown)
  4. As crust is baking, mix together heavy cream, honey, 1 stick butter and 1 cup brown sugar in a saucepan. Bring to medium heat and stir together. Simmer for 1 minute, then add chopped pecans.
  5. Remove crust from oven and pour the pie filling over crust. Place back in oven and bake for 20 additional minutes. Remove from oven and let fully cool.
  6. Transfer to a cutting board and slice into bars and enjoy.
