Mayo-Less Mediterranean Tuna Salad

A healthy dish with huge flavor!

Ingredients:

Salt, to taste
1/4 cup chopped parsley
1/2 cup chopped pitted kalamata olives
3 tablespoons olive oil
1 can tuna, packed in water
1 roasted red pepper, chopped
4 tablespoons fresh lemon juice
1/2 cup diced artichoke hearts
2 tablespoons diced basil leaves

Directions:

  1. Combine parsley, kalamata olives, olive oil, tuna, red pepper, lemon juice, artichoke hearts and basil in a large bowl. Stir together well. Season with salt and pepper.
  2. Place bowl in refrigerator to chill.
  3. Serve with lettuce wraps, pita pockets or baked bread.
