Mayo-Less Mediterranean Tuna Salad





Serves 4 |
A healthy dish with huge flavor!
Ingredients:
| Salt, to taste |
| 1/4 cup chopped parsley |
| 1/2 cup chopped pitted kalamata olives |
| 3 tablespoons olive oil |
| 1 can tuna, packed in water |
| 1 roasted red pepper, chopped |
| 4 tablespoons fresh lemon juice |
| 1/2 cup diced artichoke hearts |
| 2 tablespoons diced basil leaves |
Directions:
- Combine parsley, kalamata olives, olive oil, tuna, red pepper, lemon juice, artichoke hearts and basil in a large bowl. Stir together well. Season with salt and pepper.
- Place bowl in refrigerator to chill.
- Serve with lettuce wraps, pita pockets or baked bread.
