Slightly Spicy Wild Rice Soup





Serves 4 |
Rich, hearty and fun to make.
Ingredients:
| 2 cups wild rice, (cooked) |
| 1/8 teaspoon ground cayenne pepper |
| 1 teaspoon chili powder |
| 2 cups corn kernels |
| 1/2 cup green chile peppers |
| 1/2 teaspoon dried oregano |
| 1/3 cup onion, (diced) |
| 3 cans vegetable broth, 14 oz. each |
| 1 tablespoon cilantro, (chopped) |
| 1/3 cup carrots, (diced) |
| 1 teaspoon ground cumin |
Directions:
- Bring a large saucepan to medium heat. Once hot, add corn kernels, onion, 1 can of broth and carrots. Reduce heat and let ingredients simmer for 10-15 minutes.
- Pour in remaining broth to sauce pan. Add wild rice, cayenne pepper, chili powder, oregano and cumin. Stir together and simmer for 5 minutes.
- Spoon soup into serving bowls and top with cilantro.
