Honey-Garlic Vinaigrette Spinach Salad

Serves 4 | 
Healthy, flavorful and easy to prepare.

Ingredients:

3 cloves garlic, sliced thin
2 cups button mushrooms, sliced thin
1 tablespoon cider vinegar
1/4 cup canola oil
2 teaspoons honey
10 oz baby spinach
1 shallot, sliced thin
1/4 cup almonds, sliced
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Combine almonds, spinach and mushrooms in a mixing bowl.
  2. Pour oil in a frying pan, turn to medium heat. Once hot, add shallots and garlic. Season with salt and pepper and stir together. Cook for two minutes, then add cider vinegar and stir. Remove from heat, add honey and slowly stir.
  3. Pour vinaigrette over spinach salad and enjoy!
Course: Salad, lunch, dinner
