Homemade Potato Chips with Rosemary and Garlic

Serves 4 | 
A healthier and more flavorful alternative to store bought chips.

Ingredients:

4 Russet potatoes, scrubbed
1 clove garlic, peeled, crushed
Salt, to taste
4 cups vegetable oil
4 sprigs rosemary, lightly rubbed between palms of hands

Directions:

  1. Pour vegetable oil into a large pot, turn heat to medium-high. Add rosemary and garlic to pot. Cook until rosemary is crispy and garlic is browned. Remove from pot and set aside.
  2. Cut thin slices of potatoes with mandolin. Place slices in pot to fry. Once chips are golden brown, remove from pot and place on paper towel lined plate. Repeat process until all potato slices are done.
  3. Season with salt and top with garlic and rosemary.
