Saucy Penne Rigate

Serves 6 | 
Healthy and delicious pasta dish that’s very simple to prepare.

Ingredients:

12 oz penne rigate, (uncooked whole-wheat)
1/2 teaspoon red pepper flakes
8 basil leaves, (fresh, thinly, sliced)
2 tablespoons extra-virgin olive oil
1/2 cup Parmesan cheese, (shredded)
3/4 teaspoon kosher salt
26 oz tomatoes, (strained)

Directions:

  1. Heat a large saucepan to medium-high heat. Sauté olive oil, pepper flakes, tomatoes and salt for 1 minute. Bring pan to a boil. After boiling, reduce heat and simmer ingredients for 20 minutes.
  2. While sauce pan is simmering, cook pasta according to package directions. Drain water, transfer pasta to serving bowls.
  3. Spoon tomato sauce over pasta, sprinkle basil and Parmesan.
Course: Dinner
