Saucy Penne Rigate





Serves 6 |
Healthy and delicious pasta dish that’s very simple to prepare.
Ingredients:
| 12 oz penne rigate, (uncooked whole-wheat) |
| 1/2 teaspoon red pepper flakes |
| 8 basil leaves, (fresh, thinly, sliced) |
| 2 tablespoons extra-virgin olive oil |
| 1/2 cup Parmesan cheese, (shredded) |
| 3/4 teaspoon kosher salt |
| 26 oz tomatoes, (strained) |
Directions:
- Heat a large saucepan to medium-high heat. Sauté olive oil, pepper flakes, tomatoes and salt for 1 minute. Bring pan to a boil. After boiling, reduce heat and simmer ingredients for 20 minutes.
- While sauce pan is simmering, cook pasta according to package directions. Drain water, transfer pasta to serving bowls.
- Spoon tomato sauce over pasta, sprinkle basil and Parmesan.
