Grilled Thai Shrimp

Serves 24 | 
A great spicy and sweet appetizer for any meal.

Ingredients:

1/3 cup light coconut milk
1/4 cup sweetened coconut, flaked
1 1/2 teaspoon red curry paste
1 tablespoon fish sauce
24 shrimp, peeled and deveined

Directions:

  1. In a medium bowl, stir coconut milk, coconut, red curry paste and fish sauce together.
  2. Add shrimp to bowl, stir, and chill for 1 hour.
  3. Prepare grill for medium-high heat. Place shrimp on grill rack and cook 2 minutes per side or until done.
  4. Skewer each shrimp onto a decorative toothpick before serving.
