Grilled Ranch Garlic Parmesan Chicken Skewers

Simple and perfect for your next backyard BBQ.

Ingredients:

2 lb chicken breasts, boneless, skinless
3 tablespoons olive oil
1/2 cup grated Parmesan cheese
1 packet ranch dressing mix, 1 oz.
1 tablespoon lemon juice
3 cloves garlic, minced
6 skewers, soaked in water for 1 hour
Salt, to taste
Black pepper, to taste
Fresh parsley, chopped

Directions:

  1. Cut the chicken breasts into 1-inch cubes.
  2. Combine the olive oil, Parmesan cheese, ranch dressing mix, lemon juice, and garlic in a mixing bowl.
  3. Place the chicken into the bowl and toss to coat. Cover and refrigerate for 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto the skewers. Season with salt and pepper.
  6. Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally.
  7. Transfer the chicken skewers to a large plate and garnish with parsley. Enjoy!
