Grilled Ranch Garlic Parmesan Chicken Skewers





Serves 6 |
Simple and perfect for your next backyard BBQ.
Ingredients:
2 lb chicken breasts, boneless, skinless |
3 tablespoons olive oil |
1/2 cup grated Parmesan cheese |
1 packet ranch dressing mix, 1 oz. |
1 tablespoon lemon juice |
3 cloves garlic, minced |
6 skewers, soaked in water for 1 hour |
Salt, to taste |
Black pepper, to taste |
Fresh parsley, chopped |
Directions:
- Cut the chicken breasts into 1-inch cubes.
- Combine the olive oil, Parmesan cheese, ranch dressing mix, lemon juice, and garlic in a mixing bowl.
- Place the chicken into the bowl and toss to coat. Cover and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto the skewers. Season with salt and pepper.
- Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally.
- Transfer the chicken skewers to a large plate and garnish with parsley. Enjoy!
