Crispy Chicken Caesar Sandwich

The perfect balance of flavor and crunch.

Ingredients:

2 chicken breasts, boneless, skinless
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
Vegetable oil, for frying
1/3 cup Caesar dressing
4 sandwich buns, toasted
1 cup shredded romaine lettuce
1 tomato, sliced

Directions:

  1. Slice chicken breasts in half horizontally to create 4 thin cutlets. Season with salt, pepper, and garlic powder.
  2. Pour the flour into one bowl. Beat the eggs in a second bowl. Combine the panko breadcrumbs and Parmesan cheese in a third bowl.
  3. Dredge each chicken cutlet in flour, then dip in egg, then coat with the panko-Parmesan mixture.
  4. Pour about 1/2 inch of vegetable oil into a large skillet. Bring to medium-high heat. Place the breaded chicken in the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
  5. Spread the Caesar dressing across the bottom buns. Layer the lettuce, tomato slices, and a crispy chicken cutlet on the bun. Place the top bun on the chicken and enjoy.
