Grilled Shrimp Bowl with Avocado and Corn Salsa





Serves 4 |
A symphony of flavors and textures.
Ingredients:
1 lb shrimp, peeled and deveined |
2 tablespoons lime juice |
1 tablespoon olive oil |
Salt, to taste |
Ground black pepper, to taste |
1 avocado, diced |
12 cherry tomatoes, halved |
1 red onion, finely chopped |
1 cup frozen corn kernels, thawed |
Directions:
- Place the shrimp into a bowl. Pour in the lime juice, olive oil, salt, and pepper. Toss to coat. Let sit for 10 minutes to marinate.
- In a separate bowl, combine the avocado, cherry tomatoes, red onion, and corn. Stir together.
- In a third bowl, stir the Greek yogurt and garlic together.
- Set the grill to medium-high heat. Once hot, add the marinated shrimp and grill for 2-3 minutes per side, until pink and opaque.
- Transfer the shrimp to serving bowls. Spoon corn salsa over the shrimp, then drizzle the garlic yogurt sauce over top. Enjoy!
