Maple Walnut Twice Baked Sweet Potatoes

Enjoy this Fall twist on an all-time classic.

Ingredients:

4 sweet potatoes
1/2 cup Greek yogurt
4 tablespoons brown sugar
1 tablespoon maple syrup
1/2 tablespoon pumpkin pie spice
1/8 teaspoon salt
2/3 cup chopped walnuts
2 tablespoon light brown sugar
2 tablespoons butter

Directions:

  1. Preheat the oven to 400° F.
  2. Pierce the sweet potatoes with a fork. Arrange them on a large baking pan. Place in the oven to bake for 20-45 minutes, until soft.
  3. Cut each potato in half lengthwise and scoop out the sweet potato, leaving the skin intact.
  4. Place the sweet potato skins on the baking pan.
  5. Mash the baked sweet potato in a bowl until smooth. Then add the Greek yogurt, brown sugar, maple syrup, pumpkin pie spice, and salt. Spoon the filling into the sweet potato skins.
  6. Mix the walnuts, light brown sugar, and butter. Sprinkle over the sweet potatoes.
  7. Place the sweet potatoes back in the oven and bake for 12-15 minutes.
  8. Remove from oven, serve while warm.
