Serves 20 rolls |
Why have frozen when you can have homemade?

Ingredients:

Canola oil, for frying
5 egg roll wrappers
1 cup shredded mozzarella cheese
1/3 cup chopped pepperoni
1/4 cup pizza sauce
Warmed marinara sauce, for dipping, optional

Directions:

  1. Pour around 1-inch of canola oil into a large, deep pan. Bring to high heat.
  2. Cut each egg roll wrapper into 4 squares.
  3. Add the mozzarella, pepperoni and pizza sauce to a mixing bowl. Stir until combined.
  4. Spoon a generous amount of the pizza mixture on one side of each egg roll wrapper, leaving about a half-inch perimeter on three sides.
  5. Dip your index finger in water and wet the edges of the filling side of the egg roll wrapper. Fold over the wrapper and pinch the edges shut. Repeat with remaining egg roll wrappers.
  6. Carefully place four of the pizza rolls into the hot oil and fry for 1-2 minutes, golden. Remove them from oil and transfer to a paper towel lined plate. Repeat with remaining pizza rolls.
  7. Serve with marinara sauce, if using, and enjoy!
