Buffalo Chicken Stuffed Bell Peppers





Serves 8 |
Stuffed peppers have never been so good.
Ingredients:
| 4 green bell peppers |
| 1 onion, diced |
| 3 cloves garlic, minced |
| 4 chicken breasts, cooked and shredded |
| 1/2 cup buffalo sauce |
| 1 can green chilies, 4 oz. |
| 1 teaspoon onion powder |
| Salt, to taste |
| Black pepper, to taste |
| 1 cup shredded mozzarella cheese |
Directions:
- Preheat your oven to 375° F.
- Cut the bell peppers in half and remove the seeds and membranes. Place the peppers upright in a baking dish and bake for 10 minutes. Remove from the oven. Keep the oven on.
- Pour the olive oil into a skillet and bring to medium heat. Add the diced onion, cook and stir for 3-4 minutes. Then add the minced garlic, cook and stir for 1 minute. Add the shredded chicken, buffalo sauce, and green chilies. Stir to combine and let simmer for 5 minutes. Sprinkle the onion powder, salt, and pepper over top. Remove the skillet from the stovetop and stir in half of the shredded mozzarella cheese.
- Lay the bell pepper halves down in the baking dish and spoon in the buffalo chicken mixture. Sprinkle the remaining shredded mozzarella over top. Cover the baking dish with aluminum foil and return to the oven to bake for 20-25 minutes, until the cheese is melted.
