Maple Walnut Twice Baked Sweet Potato Skins

A yummy twist on a holiday favorite.

Ingredients:

4 sweet potatoes
1/2 cup Greek yogurt
3 tablespoons brown sugar
1 tablespoon maple syrup
1/2 tablespoon pumpkin pie spice
1/4 teaspoon salt
2/3 cup chopped walnuts, for topping
2 tablespoon light brown sugar, for topping
2 tablespoons butter, for topping

Directions:

  1. Preheat the oven to 400° F.
  2. Pierce the sweet potatoes with a fork. Arrange the sweet potatoes on a large baking pan. Place in the oven and bake until soft, 20-45 minutes, depending on the size of the sweet potatoes.
  3. Cut each sweet potato in half lengthwise and scoop out, leaving the skin intact. Place the potato skins back in the baking pan.
  4. Mash the sweet potato in a bowl until smooth. Add the Greek yogurt, brown sugar, maple syrup, pumpkin pie spice,) and salt. Mix until well combined.
  5. Spoon the sweet potato filling back into the sweet potato skins.
  6. Combine the walnuts, light brown sugar, and butter into a mixing bowl. Stir together until walnuts are evenly coated. Sprinkle the sugared walnuts over the sweet potato filling.
  7. Place back into the oven and bake for 12-15 minutes, until walnuts begin to caramelize.
