Maple Walnut Twice Baked Sweet Potato Skins





Serves 8 |
A yummy twist on a holiday favorite.
Ingredients:
4 sweet potatoes |
1/2 cup Greek yogurt |
3 tablespoons brown sugar |
1 tablespoon maple syrup |
1/2 tablespoon pumpkin pie spice |
1/4 teaspoon salt |
2/3 cup chopped walnuts, for topping |
2 tablespoon light brown sugar, for topping |
2 tablespoons butter, for topping |
Directions:
- Preheat the oven to 400° F.
- Pierce the sweet potatoes with a fork. Arrange the sweet potatoes on a large baking pan. Place in the oven and bake until soft, 20-45 minutes, depending on the size of the sweet potatoes.
- Cut each sweet potato in half lengthwise and scoop out, leaving the skin intact. Place the potato skins back in the baking pan.
- Mash the sweet potato in a bowl until smooth. Add the Greek yogurt, brown sugar, maple syrup, pumpkin pie spice,) and salt. Mix until well combined.
- Spoon the sweet potato filling back into the sweet potato skins.
- Combine the walnuts, light brown sugar, and butter into a mixing bowl. Stir together until walnuts are evenly coated. Sprinkle the sugared walnuts over the sweet potato filling.
- Place back into the oven and bake for 12-15 minutes, until walnuts begin to caramelize.
