Pomegranate Glazed Salmon

Savory and sweet with a hint of tartness.

Ingredients:

1/2 cup pomegranate juice
1 clove garlic, minced
2 tablespoons soy sauce
4 salmon fillets
Pomegranate arils, for garnish

Directions:

  1. Preheat oven to 400° F. Line a baking sheet with parchment paper.
  2. Combine pomegranate juice, minced garlic and soy sauce in a mixing bowl. Stir together until well combined.
  3. Place salmon fillets in a large rimmed dish. Pour pomegranate mixture over top and cover with a lid or aluminum foil. Let marinate for 15 minutes.
  4. Place the salmon skin-side down on the baking sheet. Place the baking sheet into the oven and bake for 6 minutes.
  5. Pour the marinade into a saucepan and bring to medium-high heat. Cook for about 5 minutes, stirring frequently, until thickened and syrupy.
  6. Remove the baking sheet from the oven and drizzle half of the pomegranate glaze over top. Return to the oven and bake for an additional 6 minutes.
  7. Transfer glazed salmon to serving plates. Drizzle the remaining pomegranate glaze over the tops of the salmon, top with pomegranate arils and enjoy!
