Cinnamon Vanilla Candied Peanuts

The right amount of sweet cinnamon goodness.

Ingredients:

1 1/2 cups water
3 cups sugar
6 cups raw peanuts
1 tablespoon ground cinnamon
1 tablespoon vanilla extract

Directions:

  1. Preheat oven to 300° F. Grease a large baking sheet with cooking spray.
  2. Pour water and sugar into a large saucepan. Bring to medium heat. Stir occasionally.
  3. Once sugar has dissolved, add peanuts, ground cinnamon and vanilla extract. Stir together and often until liquid evaporates.
  4. Transfer peanuts to the baking sheet and distribute evenly. Place the baking sheet in the oven and bake for 30 minutes, turning about halfway through.
  5. Remove the baking sheet from the oven and let the candied peanuts cool.
