Greek-Style Meatloaf

Serves 6 |
Meatloaf with a Mediterranean spin.
Ingredients:
2 slices whole wheat bread, crust removed |
1 1/2 lb ground beef |
1/3 cup olive tapenade |
2 eggs, lightly beaten |
1 teaspoon salt |
1/2 teaspoon ground black pepper |
Directions:
- Preheat oven to 350° F.
- Tear the two slices of whole wheat bread into small pieces and place a food processor. Pulse until bread forms coarse crumbs. Transfer to a mixing bowl.
- Add ground beef, olive tapenade, eggs, salt and pepper to the mixing bowl with the breadcrumbs. Mix thoroughly.
- Transfer meatloaf to a medium loaf pan. Press meatloaf into the edges of the pan. Place loaf pan in the oven and bake for 60-75 minutes.
- Remove from oven and let rest for 10 minutes.
- Cut into slices and enjoy!
