Walnut and Apple Coleslaw

Serves 6 | 

A healthier and tastier alternative to the traditional recipe.


1 apple, (cored and quartered)
3 tablespoons walnut oil
2 tablespoons mayonnaise
4 cups shredded cabbage
2 tablespoons apple cider vinegar
1/2 cup chopped almonds
Salt, (to taste)
1/4 teaspoon Dijon mustard


  1. Preheat oven to 350° F.
  2. Arrange almonds on a baking tray. Bake for 8 minutes.
  3. Slice apple wedges into thin slices. Combine sliced apples and shredded cabbage in a mixing bowl.
  4. In a separate bowl, combine walnut oil, mayonnaise, apple cider vinegar, salt and Dijon mustard. Whisk together well.
  5. Add walnuts to cabbage mixture bowl, toss together.
  6. Pour walnut oil mixture over cabbage mixture and toss together.
