Butter Garlic Shrimp Scampi

Serves 4 | 
Quick, easy to prepare and absolutely delicious.

Ingredients:

1/2 cup unsalted butter
1/4 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1 shallot, diced
1 1/2 lb shrimp, peeled and deveined
Salt, to taste
Ground black pepper, to taste
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
3 tablespoons chopped fresh parsley

Directions:

  1. Place butter in a large skillet and bring to medium heat. Once the butter has melted, add red pepper flakes, minced garlic and diced shallots. Cook and stir for about 2 minutes.
  2. Add shrimp and season with salt and pepper. Cook for about 4 minutes, stirring occasionally.
  3. Drizzle lemon juice over shrimp and sprinkle lemon zest and parsley. Stir together well.
  4. Transfer shrimp scampi to serving plates and enjoy!
