Bacon and Onion Bratwursts

Serves 4 | 
A Bavarian-style favorite.

Ingredients:

2 slices bacon
2 onions, sliced and separated into rings
1 green pepper, cut into strips
1 tablespoon Dijon-style mustard, more for topping
4 bratwursts
4 brat buns, split and toasted

Directions:

  1. In a large skillet cook bacon till crisp. Transfer bacon to a paper towel lined plate, reserve bacon drippings. Crumble bacon and set aside.
  2. Cover and cook onions and green pepper in bacon drippings over medium heat for about 5 minutes or till tender, stirring occasionally. Stir in the 1 tablespoon mustard.
  3. Make small cuts in the bratwursts. Place brats in onion-green pepper mixture, cover and cook for 10-12 minutes.
  4. Spread buns with additional mustard. Place bratwurst in buns. Top with onions and green pepper. Sprinkle bacon on top and enjoy!
