Pumpkin Pecan Pie

One of the tastiest Autumn desserts.

Ingredients:

1 pie shell
For Filling:
1 cup canned pumpkin
1/3 cup sugar
1 egg
1 teaspoon pumpkin pie spice
For Topping:
2/3 cup light corn syrup
1/2 cup sugar
2 eggs
3 tablespoons butter, melted
1/2 teaspoon vanilla extract
1 cup pecan halves

Directions:

  1. Preheat oven to 350° F.
  2. Combine pumpkin, sugar, egg and pumpkin pie spice in a mixing bowl, stir together well. Spread over bottom of pie shell.
  3. Mix together corn syrup, sugar, eggs, butter and vanilla extract in the same bowl, stir in pecans. Spoon over pumpkin layer.
  4. Bake for 50-60 minutes. Remove from oven and cool on a wire rack.
