Roasted Sweet Potato Wedges

A healthy and flavorful alternative to fries.

Ingredients:

2 tablespoons olive oil
3 tablespoons brown sugar
1/4 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon pepper
4 lb sweet potatoes, peeled and cut into wedges
8 sprigs fresh thyme

Directions:

  1. Preheat oven to 400° F.
  2. Combine olive oil, brown sugar, nutmeg, salt and pepper in a large bowl. Add sweet potato wedges and toss to coat.
  3. Transfer the sweet potato wedges to a large rimmed baking sheet; arrange in a single layer. Scatter the thyme over the top.
  4. Roast, turning once, about 1 hour, until the edges are dark brown, and the wedges are crisp.
