Chunky Vegetarian Chili

A healthy version of the comfort food favorite.
Ingredients:
1 tablespoon vegetable oil |
2 cups chopped onions |
1/2 cup chopped yellow bell pepper |
1/2 cup chopped green bell pepper |
2 cloves garlic, minced |
1 tablespoon brown sugar |
1 1/2 tablespoons chili powder |
1 teaspoon ground cumin |
1 teaspoon dried oregano |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
2 cans stewed tomatoes, undrained, 16 oz. each |
2 cans black beans, rinsed and drained, 15 oz. each |
1 can kidney beans, rinsed and drained, 15 oz. |
1 can pinto beans, rinsed and drained, 15 oz. |
Directions:
- Heat the oil in a Dutch oven or large pot over medium-high heat.
- Add onion, bell peppers, and garlic, saute 5 minutes or until tender.
- Add sugar and all remaining ingredients; bring to a boil. Reduce heat, and simmer for at least 30 minutes.
