Greek Baked Eggs

Nutrient rich, easy to make and wildly delicious.

Ingredients:

2 eggs
1 tablespoon extra-virgin olive oil
1/4 cup finely chopped red onion
1 cup baby spinach
3 artichoke hearts, chopped
1/4 cup crumbled feta cheese, more for garnish
Crushed red pepper, for garnish, optional

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Pour the olive oil in a medium skillet and swirl around. Bring to medium heat.
  3. Add the red onions to the skillet. Saute the red onions for a few minutes until tender, then stir in the baby spinach and saute until wilted. Remove the skillet from the heat.
  4. Transfer the red onion and spinach to a small oven-safe bowl. Add the artichoke hearts followed by the feta. Crack the eggs over top.
  5. Place the bowl in the oven. Bake for 12-15 minutes, until eggs are cooked to preference.
  6. Remove the bowl from the oven. Top with crushed red pepper and extra feta. Enjoy!
